100% Palomino
Valdespino Amontillado To Diego is a wine made from Palomino Fino grapes grown on the renowned farm Pago Macharnudo Alto, which has vines that are over 25 years old.
The free-run must (mosto yema) ferments in American oak butts and remains there for three months with its lees under the yeast cap (velo en flor). It is aged for eight years under the cap of yeast after it has been classified and fortified. The wine is then transferred to "criaderas" and "soleras" for another eight years of oxidative ageing.
Valdespino is one of Jerez's oldest wineries. Mr Alfonso Valdespino was the first member of the Valdespino family to begin cultivating vines and ageing Sherry wines in the 13th century. Valdespino is currently owned by Grupo Estévez.
Valdespino is a reference in the ageing of Sherry wines, known for their traditional methods in the winemaking process.
All of the grapes used to make the Valdespino cru wines come from the farm Macharnudo Alto, which is located about 5 kilometres north-east of Jerez, at 135 metres above sea level, and is planted on typical "albariza" soils. The "albariza" are white calcareous soils that retain a lot of water.
