Manual harvest in 15 kg perforated boxes. Manual selection upon entry into the winery. Complete destemming. Cold skin maceration (dry ice). Selection of the flower must. Cold settled. Spontaneous alcoholic fermentation in French oak barrels. Total ageing in barrels for 60 months with fine lees and "batonnage". No malolactic fermentation. Clarification with isinglass.
