100% Pinot Noir
Traditional Burgundian methods are used for the vinification - pre fermentation maceration to extract colour and perfume before tannin followed by a gentle fermentation ensure maximum varietal intensity. A relatively low temperature ferment (24°C) helps to preserve the delicate and subtle notes of Pinot Noir. 10% of the wine is aged for 3 months in new French Oak.
