Traditional in stainless steel tanks using sake yeasts with an average length of 60-70 days and fermentation temperatures about 6-8 °C. Movement on lees to give length on the palate. The sake east doesn't like Sulphur, we then use as few SO2 as possible and avoid contact with oxygen.
The creators of the Japanese manga The Drops of God (神の雫, Kami no Shizuku), Shin Kibayashi and Yuko Kibayashi did him the honor of designing this unique bottle, representing the components of this innovative project.
