Fabrizio Vella is a up and coming winemaker in Sicily, who uses an organic approach to create wines that are fresh, exciting, moreish and true to their origin. Sicilian wine through and through. Harvested by hand, yields are naturally limited by the winds and climatic conditions on the island. Vineyard sites are at an altitude of 350-450m, giving cooler night time temperatures which preserve the acidity in the grapes.
The first pressing is fermented in 50hl acacia wooden barrels. Soft pressed again, with a second fermentation in stainless steel for 14 days where malolactic fermentation takes places.
