Before entering Bodegas Perica, the bunches go through the selection table where they are sifted, with mechanical and manual means, to keep the best ones and start making the wines. Once the grapes are sorted, they take them to the 6,500-litre French Allier oak vats, where their production begins. The oak vats are nuetral and the wine is stabilised in stainless steel before bottling.
