All grapes are hand harvested and kept in cool conditions being processing. The Chenin Blanc is whole bunch pressed and barrel fermented with wild yeasts with no sulphur added. The Grenache Blanc, Roussanne, and Viognier are destemmed and cold fermented for 8 days on the skins before being basket pressed directly to barrel to complete fermentation. Malolactic fermentation is promoted and the wine is matured for 12 months on the lees before being racked, blended, and bottled.
