This is a "Metodo Classico" sparkling wine, also known as a Traditional Method or Champagne Method wine.
The Sangiovese grapes are hand harvested before a whole bunch pressing. The first alcoholic fermentation takes place in order to make a base wine of the 10% alcohol.
Half of the wine is separated to be aged in Allier barriques for 6 months. It is blended into the wine before the second fermentation takes place in bottle.
Once the second fermentation has taken place, the sparkling wine rests on the lees for a minimum of 36 months before remouage and disgorging.
