Hands down the best sweet wine from Malaga, possibly even Spain. Honey, raisins, white flowers and peach. This is outstanding!
Grown in the Mountains of Malaga. Specifically in Cómpeta, between the mountains of Granada and the Mediterranean Sea. Nine hectares of vineyards in different elevations (between 350 and 1,000 meters) on extremely steep slopes of rusty slate.
Once picked the grapes follow the traditional "sunning" (Pasero) - leaving them to dry in the sun to increase their concentration.Once dried it takes 2.5kg of grapes to obtain a single liter of juice! Long and complex fermentation in 225 liter wooden tanks finish the slow aging a production.
This is a serious wine, one that is described as being "up there" with the likes of Tokaji and Suaternes.
