This wine is made in clay pots (Dolium) emulating those used in ancient times to transport and store food, among which was the wine. This peculiar elaboration makes it a wine of a risky profile and different from what is expected. Orange wine in it’s best form. Don’t over-chill it!
Hand harvest picking in boxes of 15 Kg perforated. The wines category: “Orange Wine”, maceration with white grape skins however this is not permitted in the D.O. and is therefore de-classified. From a selection of vineyards between 35 and 40 years old made up of soils of granitic entisoles of sandy - clayey character. Maceration takes place in 380L clay pots. Production is limited to 850 bottles.
