Located in the prestigious Gavi area, in the frazione Zerbetta, on ancient Miocene sedimentary marne/tufo soils, Roberto & Aurora Sarottos 12 hectare estate is perfectly placed to grow quality Cortese grapes for their fine Gavi del Comune di Gavi wines. The nutrient poor white soils focussing Cortese's energy into the fruit, not the leaves. The focus at Roberto Sarotto is on the cultivation of the vines, with a desire to express the true character of the grape and land.

In the winery, mostly traditional winemaking techniques are employed, with the incorporation of modern technology where applicable. Today Roberto is responsible for the Estate and oversees all areas of production, from the work in the field to the development of the wine in the cellar. Roberto's wife, Aurora takes care of much of the office and administration work. Since Roberto Sarotto is a family-run winery, everyone has their role in the Estate, including Robertos parents, who are still active in the vineyards.
