Ridge Vineyards' wines are iconic in the world of American wine; their reds are comparable to First Growth Bordeaux and the whites mirror the quality of Grand Cru Burgundies. Paul Draper, Ridge's winemaker, has been dedicated to growing the most concentrated and flavoursome grapes followed by traditional, old world techniques with minimum intervention in the winery for 43 vintages.
Ridge's Estate Cabernet Sauvignon is designed to be drunk earlier than it's more ageable counterpart; Monte Bello, but could almost certainly be kept for another 10 years. Using 100% whole berries fermented on the native yeasts, the grapes are pressed at eight days. Natural malolactic is initiated in tank before the wine is finished in barrel with additional 13 weeks of lees contact. It's aged for 20 months in American oak barrel (48% new, 31% one-year old, 21% two-year old).
