Grapes are grown in Remelluri's own vineyards. The vines are planted on limestone terraces, with poor soil, in three valleys, Remelluri, Valderremelluri and Villaescusa. Most of the vineyards are in Rioja Alavesa, but they do extend in places into Rioja Alta. Vineyard management is organic and biodynamic.

Grapes are harvested by hand then fermented using natural yeasts in a combination of stainless steel and small wooden vats. The wine is aged for 16 months in French Oak barrels.

Remelluri was established by monks in the 14th Century. Since 1967 it has been owned by the Rodriguez family. Initially managed by Jamie Rodriguez, in 2010 his son Telmo took over the business. Telmo's philosophy is that wines should reflect the character of their origins: the grape variety and location. He reduced the production of Remelluri wines by using only grapes from their own vineyards. He also set about improving the management of the vineyards: he achieved organic certification; changed the Garnacha vines to traditional bush training rather than using trellis; he introduced mixed variety plantings. He also radically changed the winery processes, using only native yeasts, vinifying grapes from each plot separately and reducing the influence of oak. The results speak for themselves: Rioja wines with real character and individuality.
