The selected grapes were destemmed and gently pressed, then vinified in medium-capacity vats (50-100 hectoliters), with prolonged maceration (20 days) and managed through pumping over and délestages. After racking and gentle pressing of the pomace, the prompt completion of malolactic fermentation laid the foundation for the subsequent aging (10 months) in used French oak barriques (after their third passage). Finally, 3 months in bottle completed the refinement.
