The grapes are grown in various locations in Alagni in central Crete on clay - loam soils with no irrigation. The vineyards are at an altitude of 480 - 600m above sea level. After harvest, the grapes are sun dried for 7 days in the shade and 2 days in full sun. After fermentation the wine is aged in 225L oak barrels for 12 months.
The wine has the potential to age and develop in the bottle for over 10 years.
A family winery, the Lyrarakis Estate has been producing high quality wines since 1966. They specialise in indigenous varieties, with an emphasis on rare and unusual strains. An indication of their success has been the re-establishment of Dafni and Plyto vines.
