Viticulture is certified organic and practicing biodynamic. No soil enrichment or irrigation is used. Ground cover crops are grown and the soil is rarely ploughed; both of these measures keep the soil structure intact. After being hand-harvested, grapes undergo cold whole bunch maceration and musts are foot-trodden. It ferments with indigenous yeasts in large oak vats, before maturing in a large, 3,500-litre used oak foudre for 10 months. The wine are bottled unfiltered and unfiltered.
