Grapes are grown in terraced vineyards on slate soils. Organic practices are adopted in the vineyard.
Harvest is by hand, with the grapes transported promptly to the winery to preserve their freshness. Fermentation is with natural yeasts in 5,000 litre used oak barrels. The wine is aged for 9 months in French Oak barrels before bottling.
The Grifoll family have been producing wine since 1736. In 1880 they moved to commercial wine production with the establishment of the Grifoll Declara cellars. The business is still family owned today, with the 5th generation of the family now running the operation.
In 2016 Wine Enthusiast Magazine identified Cellers Grifoll Declara one of the 28 best wineries in Spain
