Husband and wife team Paulina and Sion Edwards established Edwards Distillers in November 2018. Sion initially worked on the family farm in Wales but he and Sion developed an interest in distilling spirits. Paulina studied distillation and rectification as part of her Engineering Masters degree. Sion worked for a number of specialist spirit producers before they set up their own business in Northamptonshire.
