Crisp green apple, lemon and lime. There is a little hint of ginger on the palate that adds to the fresh acidity. It has good length and is certainly a wine that can sit well at the dinner table but isn't too complex to drink on its own. Freshness is the key in this wine, its lively, lime-like acidity makes you want to go back for more. Bring me a bit of Feta and we have a date!
The harvest was performed by hand to obtain proper fruit maturity. Skin contact was carried out at 12°C for 10 hours. Fermented in a stainless steel tank, this wine had a slow fermentation rate that lasted for 15 days.
