The grapes for this wine are from some very old gnarly 35 year ols vines in and around St Florent. They are hand harvested during several passes through the vineyards - to make sure the fruit is of optimum ripeness. The careful use of oak allows the Chenin flavours to shine. Some barrel-fermentation gives a gentle, more extended, development of flavour. After resting on lees for 10 months in barrel, it is aged further ( up to 15 years) in barrel.
