This bright Manzanilla is described as "single pago", this loosely translates to single vineyard or single area. Each pago has its own unique terroir and identity that can manifest in it's resulting wine. There is an idea that in sherry, the sense of terroir is lost during the ageing process. Diatomists aim to reconnect their wines to their starting points; the soil and the grape.
