Malbec 100%
Chateau du Cèdre are Malbec specialists. Grapes for this fortified wine are harvested late, from vines growing in vineyards with clay / limestone soils.
Weather during 2015 was almost ideal: Spring was warm and dry; the vines flowered in sunny conditions in June; July and August were warm and sunny, with regular, gentle rainfall to aid development of the grapes. Harvest took place in September, again with ideal conditions.
Grapes are crushed and fermented in stainless steel tanks. Just before fermentation finishes, the wine is fortified with neutral spirit. The wine is aged for 12 months in used 500L oak vats before bottling.
The alcohol level of the wine is 17%; residual sugar 100g/L: both lower than a traditional port wine.
The Verhaeghe family began making wine in Cahors in the Lot region in the 1950's. Today the business is in the hands of Pascal and Jean-Marc, who manage their 25 hectares of vineyards, spread over 3 parcels, and wine making, including the famous "black" wine, Cahors Rouge.
