100% Godello
Grapes are destemmed and cold macerated for 24 hours before fermenting in 500 lower barrels with natural yeasts. The wine spends a year maturing in those same barrels, without filling the barrel completely to encourage a flor growth. The last few months of maturation are under flor, bringing out the tangy yeasty characteristics in the wine. The wine is lightly fined with Bentonite and bottled without filtration.
