Distilled from Pedro Ximenez wines before being aged in 750-litre capacity Castaño (chestnut) wooden casks, which have been previously used for sweet Pedro Ximenez production. The spirit rests for at least 12 years in these barrels before bottling. The use of Chestnut was most common in Jerez before 1939, where deforestation meant that American oak become the new default. It is uncommon to find these chestnut Castaños used nowadays. This unusual bottling is a little taste of history, as it's as close as possible to the brandys that would have been drunk in Spain before the mid 20th century.

The use of chestnut would provides oxidation without imparting excessive flavour, ensuring the characteristics of the Pedro Ximénez grape itself survive.
