Vineyards with traditional pergolas. Selection of plots with a minimum age of 50 years. Soils of granitic Entisols of a sandy-clay character. Dominant orientation to the West, facing the Atlantic Ocean. Part of the vineyard in organic cultivation. Manual harvest in 15 kg perforated boxes. Manual selection upon entry into the winery. Complete destemming and pneumatic press. Cold settled. Spontaneous alcoholic fermentation with temperature control (12-15ºC). Aged in tanks and oak foudre, on its fine lees for 6 months with "batonnage". Clarification with fish glue. Tangential flow filtration.
