Winemaker Matt Copeland makes this Rosé using a 20 year old block of Merlot that sits on a sunkissed ridge. The timing of picking this block is vital, the grapes must be ripe enough to avoid any green flavours. The grapes are chilled, de-stemmed and all free run juice is kept separate from the “colour fraction” to ensure a deliciously subtle salmon colour. 6 months of lees aging gives this wine is extremely full and smooth mouthfeel and balances the acidity.
This is perfect for summertime drinking but will work wonderfully all year round with Salmon, Trout or light vegetarian dishes.
