Rufete supplemented by Aragonés, Calabrés and Rufete Blanco
The Sierra de Salamanca is around 200km west of Madrid, close to the border with Portugal. The grapes for Ciclón come from a selection of different parcels across the region in Garcibuey (Rufete Blanco), Miranda del Castañar (100 year old Rufete vines), Molinillo, San Miguel de Valero (Cabrales) and San Esteban de la Sierra. The soils across these different parcels are varied including slate, granite and schist; with various expositions; altitudes and grape varieties. Rufete makes up most of the blend and is supplemented by other indigenous varieties such as Aragonés, Calabrés and Rufete Blanco.
The wine is made with 20% whole bunches, fermented with native yeasts. The wine is aged for 10 months in used oak barrels of various sizes. Sulphur is used in tiny quantities. The wine is bottled unfined and unfiltered.
