Cabernet Sauvignon 100%
Grapes are sourced from vines growing on alluvial terraces at an altitude of 640 meters in Chile's Maipo Alto Valley.
The grapes are sorted and de-stemmed by hand then macerated for 1 - 2 weeks with regular "punching down." The wine is racked by gravity into 225 Litre French oak barrels, (60% new,) where it ages for 18 - 24 months.
Indómita adopt a responsible approach to their winemaking. In the vineyards, minimal intervention is the philosophy, coupled with respect for the natural environment. They are also active in their support for local communities, prioritising employment of people from the local community and supporting local welfare initiatives.
