The bunches are hand picked and foot-trodden allowing for spontaneous fermentation. Macerated for 28 to 35 days then racked off to neutral french oak to undergo malolactic fermentation and 12 months of aging on its lees.
Black pepper, dark cherries, blackberry and herbal. Fresh and vibrant.
