Grapes are grown using organic practices on sandy soils 700m above sea level, moderating the intense summer temperatures.
Fermentation is in stainless steel, with 10% of the grapes added as whole bunches. Gentle pumping over is used for 12 days. The wine is aged for 4 months in a mixture of 1 - 5 year old French oak barrels, then blended in concrete vats.
