Grapes for this wine are grown in one of the most distinctive viticultural landscapes in the world. The terrain is shaped by the volcanic eruptions of previous centuries, with the original soils buried beneath layers of ash, (rofe.) To create a receptive environment for the vines, over 100 years ago, the farmers dug pits or hoyos through the ash, up to 2 meters deep, to enable them to plant a single vine which could access the fertile soil and moisture below. This system has the additional benefit of protecting the vines from the harsh Saharan winds.
The grapes are harvested by hand then crushed in the traditional method, under foot in stone lagares. The juice is fermented, without the addition of sulphur, using natural yeasts, then the wine is aged for 7 months in stainless steel tanks before bottling without filtration
