The grapes are sourced from three different vineyards with different soils and climate: Elgin is the coolest area where the vineyard has bokkeveld shale; Franschhoek has a moderate climate and sandy soils; Tulbagh, an up and coming area in the Breede River Valley is hot, with decomposed shale soils.
Fermentation is in oak barrels and the wine is aged in French Oak barrels, of which 15% are first fill.
Paserene is a small, family operated winery owned by Martin Smith, the winemaker and businessman Ndabe Mareda. The winery name is derived from the Latin Passeriformes: the family of birds that includes swifts and swallows. These birds migrate between Africa and Europe. A route that is often traveled by young winemakers as they gain experience in different countries.
Fantastic Chardonnay, particularly if you like some oak and tropical notes rather than lean/unripe fruit. Medium nose of pastry, red apple, mango, melon, vanilla, pineapple, with flavours of vanilla, apple and pineapple. High acidity, medium body and finish - would definitely buy again!
