Produced from grapes harvested from a singe vineyard plot of chalky, limestone soil in the village of Davayé.
In winemaking, the objective has been to preserve the freshness and flavour of the grapes and the terroir. The grapes are pressed no longer than 20 minutes after harvesting, without the addition of sulphite. Fermentation with natural yeasts takes place in stainless steel, temperature controlled tanks. Aging is also in stainless steel, for 6 - 7 months
Perfect as an aperitif or to accompany fish or cheese dishes.
Famille Paquet wines was established in 1980 by Jocelyne and Michel Paquet and is now run by their 3 sons, Jean-Baptiste, Mathieu and Camille. Since 2018 the business has been in the process of conversion to organic production, with certification due from the 2021 vintage. The vineyards are managed with respect for biodiversity, using only natural products and working each plot in accordance with its particular needs.
