Grapes are from selected vineyards in Chile's Central Valley, where the Andes and Humboldt ocean current provide cooling influences to moderate the hot sunny days. This slows the ripening of the grapes, leading to more concentrated flavours.
On arrival at the winery, the grapes undergo 2 - 4 days of cold maceration, to maximise flavour and colour extraction, before fermentation in stainless steel vessels.
Espinos Y Cardos have a state of the art winery where they aim to produce subtle, pure expressions of individual grape varieties.
