100% Sauvignon Blanc
Barrel Fermentation, Wild Yeast
The 2018 Black Edition Sauvignon Blanc is a complex, rich alternative style of Sauvignon Blanc. Fermented with 100% ‘wild’ yeast in older barrels. A partial malolactic fermentation softens the trademark acidity of this variety and produces a creamy, complex, mellow Sauvignon Blanc which will continue to develop gracefully in bottle.
Very aromatic; fresh tropical fruit characters like ripe mango. Hints of passionfruit, blood orange. Notes of hot toffee, marmalade, baking danish pastry (from the time on lees). Reminiscent of Crème brulee or crème caramel. Alluring. The palate is slightly creamy, rich in texture, complex - thanks to the ‘wild’ yeast – upfront, there is an explosion of flavour, succulent. Wild herbs, passionfruit skin, kumquat. To follow, caramelised citrus fruits, flinty lees, poached stone fruits. It’s wonderfully persistent, long and generous. A powerful and opulent wine. Very well suited to the gastronomic scene.
