Young winemaker Manuel Cantalapiedra doesn't follow trends or convention but is establishing a a great reputation for his Castilla y Leon wines.
He produces this wine with grapes from the certified organic Las Escuclillas vineyard. This is a small plot with soil that consists mostly of pebbles on clay, limestone and sand growing vines almost 30 years old.
Manuel likes to delay harvesting his grapes, then picks by hand into small crates. At the winery, the grapes are gently pressed, without addition of sulphur, and the juice fermented in stainless steel tanks with natural yeasts. The wine is left on the lees for 8 months before bottling without fining or filtration.
Cantalapiedra Viticultores have 20 hectares of vineyards, consisting of small plots with different soil types, in Rueda, near the village of La Seca. Grape production is certified organic and they follow biodynamic principles including the use of horsetail, nettle and whey infusions.
