Sauvignon Blanc 100%
Grapes are grown in cool vineyards overlooking the Elgin Valley, 420 meters above sea level. Grapes are picked by hand then pressed as whole bunches. The juice is left to settle for 12 hours before transferring to used, 500L French oak barrels. Fermentation begins spontaneously with the wild yeasts. Temperature is maintained at 18 - 22°C during fermentation. The wine ages in the barrels for 11 months before being blended in stainless steel tanks where it settles for a further 3 months. The wine is lightly filtered at bottling.
