Grapes are grown in gravel, sandstone and silica soils. They are harvested in the early morning to preserve the fresh flavours, with grapes from each vineyard block being fermented separately. After gentle pressing, the juice is left on the skins for 8 - 12 hours. The semillon and a selection of the sauvignon blanc was fermented in used, 500L French oak barrels. The wine was allowed to rest on the lees for 5 months, with regular stirring, before blending and bottling.
