Produced with grapes from vines growing on terraces with clay / sand soil 350m - 380m above sea level, allowing cooling breezes to moderate the impact of the Spanish sun. Organic practices are used in the vineyards.
Grapes are harvested by hand. On arrival at the winery, after careful sorting, the grapes undergo a 15 day maceration period before fermentation in 5,000 litre stainless steel tanks using natural yeasts. The wine is aged for 14 months in French Oak barrels, before bottling.
The Grifoll family have been producing wine since 1736. In 1880 they moved to commercial wine production with the establishment of the Grifoll Declara cellars. The business is still family owned today, with the 5th generation of the family now running the operation.
In 2016 Wine Enthusiast Magazine identified Cellers Grifoll Declara one of the 28 best wineries in Spain
