This wine stems from the second oldest planting of Pinot Grigio in Australia. Destemmed, fermented in stainless steel, and kept in contact with its lees for extra oomph and texture. Picked at 12 baume, crushed/destemmed and fermented. Lees were kept active until bottling to give texture and a small residual of sugar and co2 are retained for vibrancy.
