The vineyards are located in the valleys of the Tajo and Alberche rivers, between the Sierra de Gredos and Montes de Toledo.
The grapes were harvested in the cool of the night then undergo a cold maceration for 5 days in order to protect the fresh fruit flavours. Alcoholic and malolactic fermentations are followed by 3 months aging in French and American oak barrels.
Finca Constancia is located in Otero, in the province of Toledo. The concept, when it was established in 2005, was to develop along the lines of a Bordeaux chateau, with integrated vineyards and winery: an unusual model in Spain.
