Grapes are sourced from a single plot with clay - limestone soils in the "Le Clos" commune in the village of Prissé.
Wine making emphasises the maintenance of fresh flavours. Grapes are pressed as soon as they arrive at the winery, with no addition of sulphites. Cool fermentation in temperature controlled stainless steel vats with natural yeasts. Aged for 6 - 7 months in stainless steel.
Famille Paquet's origins were in 1980 when Jocelyne and Michel Paquet established Domaine des Valanges in the village of Davayé in the Mâconnais region. Over time. the family acquired other small estates and were joined in the business by their three sons, Jean-Baptiste, Mathieu and Camille, who took over running the operation in 2016. The new generation have pioneered a less interventionist approach and have started the transition to Organic certification.
