Grapes are harvested by hand and fermented in open top vats using natural yeasts. The wine is matured for a year in used oak barrels. Bottled without filtration or fining.
Four friends, Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente met whilst studying winemaking at the University of Miguel Hernández in Alicante. They established Envínate to make wines from grapes grown in different Atlantic influenced areas: Ribeira Sacra; Canary Islands; Extremadura; Almansa. The essence of their project is to use traditional techniques and allow the character of the grapes and terroirs to be the heart of their wines.
Taganan is a rugged area in the north east of Tenerife. The vines are planted on volcanic rocks on cliffs above the ocean.
