Produced with grapes from 100 year old vines growing in the volcanic, black sand and basalt soils of the Valle de la Orotava on the northern coast of Tenerife. At an altitude of 600 meters, the vines are trained using the traditional cordón trenzado system. No chemical additives are employed, and the vineyard is worked entirely by hand.
Grapes are hand picked and sorted then pressed as whole bunches. The juice is left to settle overnight before transferring to 6,300 litre concrete tanks for fermentation using natural yeasts. The wine is aged for 10 months in oak foudres sourced from Fruili in Italy.
Four friends, Laura Ramos, Jose Martínez, Roberto Santana and Alfonso Torrente met whilst studying winemaking at the University of Miguel Hernández in Alicante. They established Envínate to make wines from grapes grown in different Atlantic influenced areas: Ribeira Sacra; Canary Islands; Extremadura; Almansa. The essence of their project is to use traditional techniques and allow the character of the grapes and terroirs to be the heart of their wines.
