Norrel Robertson MW is the owner of the vineyard El Escocés Volante (The Flying Scotsman), which he founded in 2004 after arriving in Spain with his family in 2003. (Manga del Brujo). One of the three Master of Wines currently residing in Spain is Norrel, who has been producing wine there for more than 14 years. Scotland is where he was born and reared. In order to produce wines with true character, Norrel collaborates closely with local producers in Calatayud to find ancient vine blocks of high quality.

Grown on aged bush vines in arcillo-calcaire (chalk and clay soils) at an altitude of 700–900m above sea level, in the Ribota valley of the Calatayud DO. Free-draining soils, little precipitation, and notable temperature changes during the day and night result in wines with exceptional colour, aroma, and distinct varietal aromas.
