The Murgers des Dents de Chien vineyard is southerly facing at the southern limits of the Saint Aubin area, very close to Grand Cru Montrachet. Located mid slope, at around 340 meters altitude, the soil is calciferous, with protruding jagged rocks resembling dogs teeth.
Grapes are harvested by hand and taken to the winery in small crates. After light crushing, the juice is allowed to settle before being transferred to oak fermentation barrels, 20% new. The wine rests on the lees for 12 months before blending and a further 6 months aging in stainless steel. The finished wine is lightly filtered before bottling.
The Larue family winery is based in Saint Aubin, but they own 17 hectares of vineyard across the Saint Aubin, Chassagne-Montrachet, Puligny-Montrachet and Aloxe-Corton appellations. The current operation is a blend of great experience with youthful endeavour: Denis and Didier Larue with their sons Bruno and Vivien. Their approach is minimal intervention, with adoption of organic and biodynamic practices to produce wines that are a true reflection of their Burgundian heritage.
