The Sur le Sentier du Clou vineyard is located on sloping terrain to the north east of Saint-Aubin village. The 35 year old vines are planted in clay / limestone soil with an east-south-east orientation. The grapes are harvested by hand, then receive a gentle pneumatic pressing and the fermented wine is aged on the lees in oak barrels (25% new.) Malolactic fermentation is encouraged to soften the natural acidity of the wine. The wine is bottled after 9 - 12 months.
Pairs well with seafood, but is also delightful to drink without food.
Domaine Henri Prudhon was initially established by Henri Prudhon and his wife. During the 1980's their son Gérard established a bottling plant, and began selling the estates wines directly. As the operation grew, vineyard sites in Chassagne Montrachet and Puligny Montrachet were acquired. Today the operation is managed by Gérard's sons, Vincent and Philippe. 85% of the wine produced is sold outside France.
