The terroir here is unique, a high content of white limestone in the chalk and clay. The microclimate brings extra humidity and morning fog.
On arrival the grapes are sorted and destemmed before a gentle pressing. After the must has settled fermentation takes places in stainless steel at low temperature. To add texture the wine is kept on its fine lees for 12 months.
