The village appellation wine of a renowned chablis producer. Domaine du Colombier owns 55 hectares of vineyards, planted exclusively with chardonnay vines. On arrival at the winery, the grapes are loaded into the pneumatic press then the juice is fermented in stainless steel tanks at 19°C for 15 days. After malolactic fermentation the wine is aged in stainless steel tanks for 6 - 18 months.
Domaine de Colombier was established in 1887 and has been passed on through the generations. In 1957, Guy Mothe began to specialise exclusively in chablis wines, producing the 4 categories: Petit Chablis; Chablis; Chablis Premier Cru; Chablis Grand Cru. Today his 3 sons, Jean-Louis, Thierry and Vincent run the business. They are respectful of their heritage, blending modern techniques with traditional Burgundian practices.
