Melon de Bourgogne 100%
Produced with grapes from 50 year old vines growing on rocky, schist soils. The vineyards are grassed to soak up rainfall and reduce the vines access to water. Fermentation is at low temperatures to preserve the fresh flavours. Aged on the lees for up to 14 months, with regular bâtonnage, (stirring of the lees.) The wine is bottled directly from the aging vat which gives the wine a light natural spritz.
Domaine des Herbauges has been producing wine since 1864. The current wine maker, Jérôme Choblet, is the 4th generation of the family to manage the business. 30 years ago Jérôme's father Luc made the decision to switch to sustainable environmental practices, motivated by both the desire to optimise the natural expression of the grapes produced, and safeguard the environment for future generations.
